Oude is a very special blend of wild ales aged for 1 up to 4 years. Over 1/3 of the total blend is aged in oak puncheons (500l) for 4 years. We’ve never used such an old beer in our blends so far. This gives the final beer a characterful and complex taste. Another 50% is a younger beer of 1 years old which adds freshness, herbal and floral qualities to the blend. The remaining part of the blend is a 2 year old beer that acts as a bridge between the old and young.

Flaska från Tommie Sjef. Något mörkare orange/rostbrun och disig med vit krona. Stall, mycket citrus, grape, citrusskal, mineral, apelsin. Något fylligare, viss sötma. Hade möjligen velat ha den lite mer clean och en klarare syra. Även kanske en unns mer komplexitet. Farligt dock att jämföra med exempelvis 3F.

Bottle.. Color: Orange amber, thin creamy off-white head. Aroma: Lightly tart, notes of oak and some fruity grape. Taste: Nice balance of light to moderate sweet and tart and light bitterness, small and fast disappearing acidic vinegar notes in the throat. Fruity notes of grape, citrus and sour apple. Wet grass notes. Quite a lot of oak wood and tannins. Light hints of vanilla. Subtle wild yeast funk. Dry mouthfeel. Smooth, almost foamy. Medium body, below average carbonation. Nice complexity. Very nice.

Bottle. Hazed pale copper colour. Fine white head. Nose has brioche bun. Stewed apple. Sherry dregs. Vanilla pod. Wet wood. Sweaty brett. Taste has a vanilla sweetness. Gets tart and sharp. Touch of woody bitterness. Smooth and easy drinking, with minimal acidity. Fine carbonation. Tart, sharp, apple skin bitterness to finish. Glorious beer with lots more to come.
