Banana Pancake Prestige is the newest version of our meads aged in special store pick barrels. This particular batch of Banana Pancake was paired up with a store pick Jack Daniels barrel from Aman's. Jack Daniels, known for providing banana aromatics and flavors, seemed like a perfect pairing for this iteration of Banana Pancake. Aged for 8 months in the barrel, this batch is bigger all around than previous iterations of this mead. Besides just a much longer period of time in the barrel, this batch saw various other adjustments in the recipe to help further differentiate it from batches before. A shift to a dark robust maple from Vermont, along with a touch more cinnamon worked in all help to pop the flavors against the extended age time.
