Containing threads brewed over almost a year (including, at 25%, the very light and oaky batch #1, its first appearance in a blend). Shiro is deep, tart, fuzzy and fun. The blend, 860L total, was re-fermented on more than 600 lbs of Nova Scotia-grown Shiro plums for several months prior to bottling. Crush and/or consider.

Poured from 500mL bottle (w/ the brewnosers). Hazed yellow with minimal white head. Nice funk, touch of plum, good balance. Almost a lambic quality.

(On tap @ Birreria Volo, Toronto, Sept 28/19) Limited notes due to post-Witchstock revelry. Lightly tart and fruity farmhouse with some lemon and subtle yellow plum, light sweet/tart/bitter mix, soft barrel notes, a little funk. Quite competent brewing but everything felt a bit too dialled back for me, maybe palate just blown after a beer festival.

Flaska från Etre Gourmete. Dsig gyllengul vätska med ett lågt frasigt vitt skum. Funkig frisk doft med strå, citrus och plommon. Småbubblig munkänsla, torr, ganska snäll syra, funk, lätt fruktig med smak av syrliga gula plommon. Pigg och trevlig med fina funk och fruktighet. Gott
