Named after the Aurora Borealis that here in Orkney we are lucky enough to catch a glimpse of in the clear winter night skies. In Orkney the northern lights are known as the 'Merry Dancers' and are another reason to enjoy this time of year, some solace from the short days.
We purposefully went for less bitterness but kept the lingering hoppiness at the end. A different from normal water profile also gives this beer a softer mouthfeel, we think!
Classic UK pale malt and fruity hops from New Zealand and North America provide the flavoursome balance.

Keg at Twenty One, Kirkwall. It pours clear golden with a small, fluffy white head. The aroma is fresh, fragrant, floral, honeydew melon, lychee, Turkish delight, fresh citrus, tangerine, orange and a touch of spice. The taste is firmly dry, crispy, bitter, pithy, zesty, lemon peel, grapefruit, tangerine, floral, slightly soapy, lychee, clean malt base and nutty biscuit with a drying, zesty finish. Lightish body and moderate+ fluffy carbonation. Decent session IPA vibes. Clean and sessionable

Can from Appellation Wines. Pours hazy yellow gold with a thin white head. Aromas of peach, biscuit, citrus. Taste is more of the same. Light sweet biscuit finish.

Can from Appellation Wines. Appearance - cloudy yellow to orange. Snow white head. Nose - ripe mango and orange. Light biscuit. Taste - tinned mandarin, slight yeast and orange zestiness. Palate - light bodied, light bitterness on the finish. Overall - decent.
