Utilizing our pale sour base beer as a canvas, we opted for a rather restrained (for us) amount of cherries in order to highlight the deep, jammy pie filling texture and flavour depth of the cherries, but thinning and brightening these flavours with the lactic acid forward nature of the underlying base blend. Although the wait was long, we are excited to bring you our take on what we consider to be a very special style.

Malts: Pilsner, Wheat, Oats
Yeast: A Melange of Several Different House Primary Strains, Several Select Brettanomyces Strains, Lactobacillus plantarum, Lactobacillus brevis, Additional House Cultures, Saccharomyces bayanus for bottle conditioning

Bottle, 75cl corked, at Patricks. A clear, copper colored beer with some bubbles. Fuji, orange zest, lemon, red berries and some wheat in the aroma. It's medium to full bodied, tart and nicely carbonated, with a good sourness. Lemon, red berries, cellar, cherry and some orange juice in the flavor. Lasting finish. Delicious indeed. 230929

Light tartness, decent cherry. Quite acidic, acetic, as is about the norm for this brewery.

Bottle pour at Farmhouse Fest 2023, pours a cloudy bright amber with a small white head. Aroma brings out gently tart cherries, some buggy notes, and oak. Flavour is full of tart cherries, with oak, buggy notes, and some light cinnamon. Full of tart cherries, finishing oaky and wild. Good stuff.

A taster shared with Josh, Matt, Phill, and Ryan during FHF with priceless Rachel's (yup, again!) help in organizing all the mess with glasses. Appearance: hazy dark golden. Aroma: cherries, funky, bugs, oak. Taste: same. Overall: good.

750ml corked and caged bottle. Pours a hazy pink-orange with a small, fizzy, short lived, off-white head that leaves spotty lacing. Funky aroma of wheat malt, Brett, hay, cherry, leather, oak and floral hops. Sweet fruity flavour of wheat malt, cherry, brown sugar, oak, Brett, oats, light cinnamon and floral hops in a dry, sour Lacto finish. Medium body with an oily texture and lively carbonation. Fantastic, nice complexity.
