Each barrel that this Brett. saison was aged in was assembled by hand - using a technique that has been nearly unchanged for hundreds and thousands of years. A trade that needs strong hands and backs and an eye for picking the right logs; without too many burls or knots or scars or timber streak.

500ml bottle. Pours a hazy straw colour with a small, fizzy, short lived, white head that leaves spotty lacing. Aroma of wheat malt, oak, Brett, peach, lemon and floral hops. Sweet fruity flavour of rye malt, pineapple, peach, lemon, funky Brett, vinegar, white wine, oak, black pepper and floral hops in a dry, tart finish. Medium body with an oily texture and soft to average carbonation. Excellent, nice complexity.
