We filled a single Pedro Ximénez sherry barrel in July 2019 with a raspberry and cherry sour beer and with time it has taken on some exceptional multidimensional attributes. The nose opens sweet and vinous with oak and hints of blackcurrant. On the palette an initial bouquet of sweet forest fruits fade into complex barrel notes with cherry and raspberry developing into an assertive, but not overpoweringly sour finish.
