忽布古丹醸造のアルコール度数の最高値が更新されました。Belgian Quadrupel(=ベルジャン・クアドルペル)は、略してBelgian Quad(=ベルジャン・クワッド)とも呼ばれます。このスタイルのルーツは、トラピスト(修道院)で僧侶が醸造していたものに由来しますが詳しい説明は割愛します。歴史が苦手な方でも、ビールにまつわる歴史であれば面白く感じられるかもしれません。ご興味のある方は是非調べてみてください。
外観は深いバーガンディの色合いと、ややクリーム色の泡立ち。レーズンやイチジクのようなダークフルーツのフレーバーと、酵母が吐き出すエステル香は洋ナシのようでもあります。人によっては印刷したばかりのインクの匂いを連想するかもしれません。知覚される甘さとは裏腹に、意外と残糖は少なく、爽やかな炭酸とともにドライにフィニッシュします。どれくらい残糖が少ないのかというと、一般的なピルスナーほどの糖度とお伝えしておきます。甘さにまつわる指標が糖度だけではないことがハッキリとわかることでしょう。本場のスタイルではブラウンシュガーなどの砂糖が使われますが、忽布古丹醸造のアレンジとして、黒糖を代用しています。本当にこの黒糖が美味しくて、ブルワーたちは何度もつまみ食いをしました。黒糖の使用は、ユニークな複雑性をもたらしてくれました。さらに、ドライな味わいへの調整と、過去最高値のハイアルコールを達成するために、麦芽糖も使用するなど、既成のレシピや固定観念に捕われない、自由で、極端なビールになったと思います。宗教に関連付けられていない、現代的な解釈で醸された味わいの、いわばジェネリックでモダンなBelgian Quadrupelは、12%のハイアルコールがもたらす酩酊感も相まって、退廃的、情緒的な気持ちを引き出してしまう魅惑の液体となりました。

The highest alcohol content of Hop Kotan Brewing has been updated. Belgian Quadrupel (= Belgian Quadrupel) is also called Belgian Quad (= Belgian Quadrupel) for short. The roots of this style come from what the monks brewed in Trappist (monastery), but I won't go into detail. Even if you are not good at history, you may find it interesting if it is related to beer. The appearance is a deep burgundy shade and a slightly creamy bubbling. The flavors of dark fruits such as raisins and figs and the ester scent exhaled by yeast are also like pears. Some people may associate it with the smell of freshly printed ink. Contrary to the perceived sweetness, there is surprisingly little residual sugar, and it finishes dry with refreshing carbonic acid. As for how little residual sugar is, I would like to tell you that it has the same sugar content as general pilsner. You can clearly see that sugar content is not the only indicator of sweetness. In the authentic style, sugar such as brown sugar is used, but brown sugar is used as an arrangement for Hop Kotan Brewing. This brown sugar was really delicious, and the brewers ate it many times. The use of brown sugar has created a unique complexity. In addition, I think it has become a free and extreme beer that is not bound by established recipes and stereotypes, such as adjusting to a dry taste and using maltose to achieve record high alcohol. Generic and modern, with a contemporary interpretation that is not associated with religion, the Belgian Quadrupel, combined with the intoxication of 12% high alcohol, elicits a decadent and emotional feeling. It became a fascinating liquid.

Deep, deep purple-red with a thin off-white head. Tart and slightly sour berries, brown sugar, plum. Medium bodied. Less sour in the flavor but definitely full of dark fruits, ripe berries, tart notes, and rich dark melted sugar. The finish is more dark fruits with some tart notes. The 12% is very well hidden. I’m impressed with this.
