We chose a grist that has more in common with a Witbier utilizing 30% malted wheat. We used our intensive German style step mash to maximize malt flavor and fermentability. In the kettle we used mostly Spalter Select and some Hallertau Tradition near the end of the boil. Before lagering for many weeks we dry hopped it with a small amount of Hallertau Blanc for its high tone fruit character while remaining distinctly Old World. 5% ABV.

Can thanks to Anthony. Pours a pale golden with small white head. The aroma is wheat and citrus. Slick body, dough, wheat, light crisp finish, good.
