2023: A few honey-soaked small format Rock Filter barrels and blended them w/ a few small format maple syrup-soaked Rock Filter barrels which we blended w/ a large format Willet rye barrel. Barrel ages ranged from 25 to 39 months. The base beers were were characterized by big notes of Cocoa, vanilla & mocha coupled w/ massive barrel tones. Roasted Brazilian & Dominican cocoa nibs lending rich cocoa notes w/ mild nuttiness. Scraped vanilla bean caviar from Thailand, Mexico & Brazil. 15%

Frothy white fair mostly diminishing head. Black colour. Heavy malty and moderate hoppy aroma. Heavy bitter fantastic flavor. Long heavy bitter finish. Creamy palate.

Bottle @ Café Albert. Black without head. Aroma is sweet, roasted malt, coffee, chocolate, light honey and bourbon. Flavor is very sweet and light bitter. Sweet finish with a little warming alcohol. Oily and soft. 091124

Bottle @ Cafe Albert. 15% ABV. Pours black no head. Aroma of roasted malt, caramel, dark chocolate, maple, bourbon. Flavor is sweet, roast malt, caramel, dark chocolate, maple, vanilla, bourbon. Full body, oily mouthfeel, soft carbonation, sweet finish with warming alcohol. Smooth. 091124

Black and thickю Aroma: very rich, caramel, maple syrup, good chocolate, vanilla, bourbon. Tastes: thick, sweet, vanilla, bourbon, chocolate cake with vanilla and bourbon, very fine.

Tap at the Peders Stouts V5/Forager TTO event 21/09/2024 Dark sweet roasted malty with lots of chocolate and some sticky maple sweetness, sweet honey, light vanilla, coffee chimes, full body and mouthfeel, vanilla accents, lingering malty finish.
