A blend of three different vintages - 2020, 2021, and 2022 - of 100% spontaneously fermented beer.
For Jester King SPON, we mix water from our well with local grains in a turbid mash, boil the wort for hours with aged hops from the attic of our barn, chill the wort overnight in our coolship, 100% spontaneously ferment the beer with native yeast and bacteria, and mature it for years in oak barrels before blending and natural refermentation in the bottle. The resulting beer is a unique reflection of the Texas Hill Country, the ecology of the Texas winter, and the people of Jester King.

Bottle, 2024 vintage. Hazy peach, medium white head, average retention. Aroma of funk, oak, apricot. Taste is lemon, oak, citrus, funk. Bright.

Bottle shared at a tasting at troubles' place. 2022 bottle. Cloudy golden. Barnyard, oak, sweat, sour, fruity, citric. Great and balanced.

75cl. Bottle. Ratebeer Odense Tasting, June 2024. Pours cloudy golden yellow with a white head.Funk, sesame, grapes and wood. Dry and moderate tart. Tasty stuff.

On tap pours out golden topped with a white head. Nose is nice big tartness sour notes some citrus zest and barrel. Taste is more of the nice zest notes great sour tartness and some funk.

Poured from 750mL bottle (blended Feb 12, 2018) @ July Black Xmas. Hazy gold with small white head. Funk and wood, good balance, quite nice. Probably one of my favourite Jester Kings.

On tap. Pours a hazy dull amber with light head. Aromas of stoned fruit, cottony funk, grapes and wheaty malts. Flavors of tart grapes, nectarines, and sharp wheat.

Keg at Rutland Arms, Ratebeer Sheffield mini-gathering 04Mar2023. Hazy orange gold colour, no lasting head and aroma of sour fruits, citrus, apricot, yeast. Taste is sour, tangy, pale malt, citrus rind, fruity, funk, with light bitterness. Medium bodied, soft carbonation, drying sour finish. Very drinkable.
