Fallow in Light is a blend of spelt saisons fermented and aged in oak and refermented on peaches.
This 2019 / 2020 harvest beer was created from a blend of aged mixed culture beers brewed with spelt and refermented on organic 'Blushing Star' peaches grown in Bridgeport, Washington during both the 2019 and 2020 harvests at RAMA Farm.
This beer was refermented to condition in the bottle with raw Washington Wildflower and Star Thistle honey.

750ml bottle pours out hazy golden topped with a fizzy white head. Nose is nice sweet tart funky peach notes with a great oak barrel addition. Taste is more of the nice sweet peach notes oak barrel lemon zest tartness and some funk.

Bottle thanks to Anthony. Pours a hazy gold with small white head that quickly. The aroma is strong peach candy, funk, oak, floral. Slick body, tart peach, light funk, oak, lemon zest, balanced, really enjoyed this.
