Dry stout with blackened hazelnut
We have been waiting for a beer in which we could showcase the culinary process of 'blackening' for a minute now and we finally have it. 'Blackening' is the sloooooow browning or caramelization of a fruit, vegetable, nut or whatever other ingredient you can get your hands on. You may have tried black garlic before - same thing, except we chose fresh hazelnuts as the ingredient of choice. We held them at 60 c for 60 days - during which the nut inside the shell slowly browned, developing flavours and aromas of nutella, chocolate and coffee. Once they were ready we smashed them up to condition a dry Irish stout on.

On tap at House of Funk, pours black with a small tan head. Aroma brings out fairly gentle toasted hazelnuts, with subdued roast and dry cocoa powder. Flavour is nutty and toasty, with a strange raw, “green” hazelnut character that's somewhat green peppery. There's some toasted malt character but the odd hazelnut notes kind of take over. Not really a fan of this.

Nice deep brown body and some good foam. Aroma is okay sweet hazelnut, a bit of roasted barley. Taste is nice hazelnut, roasted barley, cocoa. Carbonated, a little chalky and watery, could be smoothed out a little. Still quite nice, layered, enjoyable.
