Pilgrim's Dole is a barleywine-style ale made with fifty percent wheat malt, or what we at New Holland call a wheatwine. Pilgrim's Dole blends warming and slightly sweet flavors with a unique caramelized character. Rich, malty body with unique caramelized character and hints of raisins, nuts and figs. Pairings: fruit crisps, creme brulee, salted caramels, slow-roasted meats.

Pour is a nice copper color with a really tight and small head and lots of floaties. Pineapple and caramel are present in the nose, and the flavor is big, syrupy and silky with caramel, pineapple, alcohol warmth, and a creamy flavor as highlights. This one started a bit weak with the aroma, but flavor and blend are better than initial judgment would have indicated.

Pour is a very clear copper with a white head. Aroma is yeasty and doughy with some hops in there. Flavor is where this loses points. At first you notice the super sweet vinegar then comes the sour apple pucker at the swallow. This is not even close to a barley wine.

Draft, at New Holland. Brown IPA colored, light for a barleywine. Taste is kind of a sour cherry, like a Flanders red, perhaps. Oddly, I get an impression of wheat, too. Nice lacing in the snifter, a little bit of a brandy smell. Not "big" in flavor or even alcohol taste, although I paid for it later. Interesting and contemplative. Still a bit young; should be great as it ages.

2003 bottle consumed 3/18/05. Another filtered creation from these guys. . .what’s up with the filtration on these high gravity beers. That’s garbage, IMHO. Amber-auburn chestnut color with light garnet tinges and a creamy, beige colored head with low retention. Smells fruity and lightly sour from the wheat. Lightly acidic, wheaty palate never really gains any substance. Much more flavor than the the 2003 Dragon’s Milk, but not any particularly exciting flavors. Alcohol, cherries, bitter roast and breadiness. Has aged without a problem, so that’s encouraging, but it probably didnt change much due to the filtration/pasteurisation. Pretty boring, malty/sugary/bittersweet wheat mess towards the end, body is medium and has lots of thinning on the end. Sharp/acidic notes, light vinousness. Off to the drain you go. . .

Randomly mashing together 2 styles does not a good beer make. Pours a clear amber color with a medium thin and short-lived off-white head. Very little lacing. Light citrus, wheat and caramel in the nose. Harsh and oily character, with bitter hops and citrus on one end and sweet malt and toffee on the other. The finish is kind of musty and bitter. I just did not enjoy this one very much.

An amber beer with a disappearing orange head. The aroma is sweet with notes of caramel and alcohol. The flavor quite dry with hops and lots of alcohol. I like the concept Wheatwine.

Perhaps Sir William condoned rations, but the Dutch of Holland sure wouldn't be caught handing out "doles." This beer poured a fiery copper red-orange, with a thin off-white ring of carbonation hugging the glass. Spicy wheat aroma with a touch of moldy hay. Flavor dominated by wheat tang, with touches of fruit and wet hay. Alcohol is evident. Would be interesting to age. Still, the "wheat wine" style is limited by the predictable nature of its signature grain. I accept my dole, although this pilgrim, if he may suggest, prefers more interesting handouts.
