750mL bottle pour at Lord Byron, pours a hazy golden with a small white head. Aroma of musty sweat socks, light leather, and a touch of funk. Flavour is dry, with light leather, musty funk, earthiness, and a touch of tang. I would’ve never guessed this was wine barrel-aged. Nice musty leather and old wood, but not Cantillon’s best product.

[2021 Vintage] Bottle pour at Lord Byron. Pours murky blonde with a white head. White wine grape must, some dusty barrels on the nose. Flavour has nice grape must, some funky character. Nice.

Cantillon lambic aged on manzanilla barrels, a type of dry sherry; shared with sebletitje and Craftmember at Moeder Lambic Original. Snow white, medium thick, large-bubbled, opening head, misty deep golden robe with apricot tinge. Aroma of green apple, sherry vinegar, freshly cut sorrel, Dutch yellow curry powder, turmeric powder and even fenugreek pellets, dried lemongrass, unripe nectarine, vin jaune. Dry, tart onset, green apple, unripe plum and wood sorrel, softish carb, full rounded mouthfeel; bready core strongly dried by lactic tartness and a sherry vinegar-like effect without the harsh acidity. Retronasal ‘kerriepoeder’ (yellow curry, turmeric and fenugreek) returning, as in a vin jaune barrel aged lambic (La Vie Est Belge springs to mind), before a lemony tart, dry, lightly funky, tannic finish sets in, long and complex with some bready yeastiness trailing behind. Reminiscent of La Vie Est Belge in more than one respect but still very distinct; a beautiful and very memorable addition to Cantillon’s already impressive output.

Bouteille 75cl partagée avec Wim et Vincent au Moeder Lambic Original. Bottled 03/09/2021.
In sherry intéressant avec la particularité d'être dans une zone maritime, ce qui procure dans son vieillissement l'apport délicat des effluves marins - salins et de la fleur locale de Sanlucar.
Dorée, pâle paille, col fin blanc avec un léger blanc-cassé.
Arôme sur un nez délicat et puissant mettant en avant d'excellents effluves de vin cuit - de suite le nez de Sherry se fait présent. Légères notes d'épices, fleuri avec un délicat soupçon iodé - comme respirer l'air le long de la mer.
Palais est délicat avec le caractère lambic qui se ressent bien sur son caractère cellier, cave, funk et un ajout bien présent et tout en rondeur du Sherry avec ce caractère rappelant un vint cuit/porto d'excellence. En bouche, le tout se mêle bien à l'acidité et prend un léger côté minéral, herbacé rappelant le fenugrec avec une oxydation délicate avec une pointe d'amande et une délicate amertume en fin de bouche. L'apport de la barrique de Manzanilla est très présent, sans jamais devenir surfait - par moment, nous pourrions quais penser que le vin a été ajouté au lambic alors que juste la barrique a été utilisée.

Bottle pour at Arrogant Sour Festival, 2022. Cloudy orange with small white head. Nice funk and quote vinous, musty, grapes. Medium+ sourness. Soft texture. Quite interesting.

Bottle. Cantillon. Hazed orange gold. No head to speak of. Nose has orangey grape must. Old oak. Taste is tart and musky with a distinct Sherry character. Despite appearances this is bright on the palate. Fine carbonation. Tart and dry finish but with a lingering light grapy sweetness. Lovely sherry like notes throughout.

0,15l from bottle shared at Arrogant Sour Festival 2022. Yellow hazy color, small white head. Smells oak, subtle curry, spices, peppery. Nice smell. Full body, soft carbonation. Tastes peppery, earthy, oak, wood, curry, spices, nutty. Finishes lightly dry and lightly sour with notes of curry, peppery and oak notes. Finishes lightly dry and lightly sour with notes of curry, peppery and oak notes. Very balanced, a bit too barrel forward for me, but overall good
