Oud Bruin is a traditional early 17th century style of top-fermented beers from East Flanders. Clearly malty, fruity and slightly caramel with pleasant sour notes. We fermented our Oud Bruin twice - first with brewer's yeast, and second with wild yeast and lactic acid bacteria already at the stage of aging in Porto Ruby barrels. Thanks to this, we managed to achieve an excellent balance between acidity and maltiness, enhanced by notes from the Porto cask, where it was spent 2 years.
