In our most recent experiment, we set out to try out a new yeast from @EscarpmentLabs. Hydra is a genetic hybrid of Vermont Ale (the house yeast for our hazy boiz) and Cerberus. This yeast offers lower attenuation for an increased silky mouthfeel and pronounced citrus juice flavours. We amped up the amounts of oats and wheat in the grain bill to accentuate the yeast characteristics. Pairing with a smooth hop combo of Amarillo, Cashmere, and Talus one can expect rich notes of papaya, orange, and unripe mango.
