Panda 🐼 at home big thanks to Wingman Dave. A light hazed straw gold coloured pour with a decent white cap. Aroma is funky vinous fruits, white grape, drying tanin, some straw, lemon rind, lacto, some oak. Flavour is composed of tangy lemon rind, prickly lacto, funky vwine staves, lacto, white grape, light mouldy wood. Palate is semi sweet, tangy, mild pucker, fine carbonation. Nice.

Panda at home, big thanks to Dave, 08/02/23. Almost clear golden with a thin white cap. Nose is tarte white grape skins, damp wood, white wine soaked oak, hay bale, green berry skins. Taste comprises sharp green berries, gooseberries, white wine barrel, funk, vinous, acidic twinge. Medium bodied, fine carbonation, semi drying close with a balanced acidic rise. Solid well balanced lambic.

Bottle at the brewery. Pours clear gold with no real head. Aroma is oak, wood, white wine, grape, funk. Taste is really mellow white grape, oak, light funk, marmalade sweetness. Really mellow and subtle with a fresh zingy sharpness at the end. Cracking stuff.

Bottle at Cantillon taproom Brussels, Saturday 1st October 2022 in the company of Lynn and Barry on Barry's birthday. Pours a beautiful clear gold, fabulous colour. Crisp, clean and tart, light funkiness, zippy, fresh, really good, there is a clear wine 'white grapey' flavour, dry finish.

Bottle pour at Arrogant Sour Festival 2022. cloudy golden with minimal white head. Vinous, white grapes, funk, barrel, musty. Soft texture. Balanced.

Cantillon lambic enriched with the pomace (solid grape remains so skins and seeds) of Gewürztraminer from Germany; shared with Goedele and Craftmember. Medium thick, snow white, loosely structured and quickly dissolving head, initially clear pale straw-golden robe, turning misty with sediment. Aroma of cleary recognizable sweet grapes (indeed Gewürztraminer!), ripe gooseberries, Chardonnay, grapefruit juice, lime peel, walnut shells, Conference pear, green kiwi, old dry wood, sulfuric and sweaty (Brett) hints in the background. Gently ‘rinse’ onset, tart but mildly so with lots of white grape sour-and-sweetness, quite juicy and fruity, hints of purple gooseberries and green apples on the sides, smooth vinous body, finely tingling carbonation; woody and sherry-like notes over a slender bready backbone soaked in grape juiciness, with this refined lime-like lactic acidity gracing the edges. Ends refreshing sour-and-sweetish, very vinous and grapey, slender and elegant – like a light-bodied white wine, in fact this probably comes closer to any other grape lambic I ever had. Stunningly beautiful.

Bottle at Cantillon. Pours orange gold with small white head that lasts. The aroma is white grape, floral, lemon zest, wood. Slick body, sweet white grape, light funk, oak, balanced acidity, enjoyed this.
