We selected specific varieties to go to press for this cider-wine, the juice is collected in stainless and subjected to sub-freezing temperatures. Once frozen, We begin a slow thaw with which the first trickles are kept and patiently fermented. Apples and sweetness fill the nose of this wine and continue to dominate the palate. This is Indiana’s first Ice Cider!

The bottle from the cidery simply said “ice cider”. If I remember correctly it’s a lower abv now though (12 or 13%). It pours clear gold and has a rich apple aroma. The flavor is very sweet with intense apple and some sugar. It’s borderline syrupy. While quite drinkable as a dessert, half the bottle was plenty and it doesn’t manage the buttery smoothness that makes the best ice cider go down so well despite being very sweet. It’s still good, but probably best in limited quantities.

Draft sample at the winery tasting room. Light apple brandy, vanilla, and spicy aroma. Clear brass color, no head as per usual for cider. Tannic spicy apple, vanilla, oak, and light alcohol flavor. Medium body, flat carbonation.
