Apple dominates the nose, this cider is dry and bitter to the palate. We took juice from only two varieties of apples and fermented them until the yeast expired. We kept the cider on the lees until bottling to get a product reminiscent of the days of yore.

Draft sample at the winery tasting room. Tart green apple aroma. Clear pale yellow, no head per usual for cider. Light fresh dry apple and green grassy flavor. Light body, soft carbonation. I got to sample this one with the owner, who said it’s one of his favorites. He told me it is intentionally light. Another nice dry English style cider from McClure’s.

sampled at the cidery last fall - Sweet apples dominate the aroma of what turns out to be a tart and fairly dry tasting cider. It’s light bodied and could use a bit more heft. This one’s alright but I’m not crazy about it.
