A "graf" is a beer-cider hybrid; this particular graf is a mixed-culture fermented saison made with an interesting blend of fruit from the Sunshine Coast orchards of Banditry Cider. The Banditry crew came to visit Dageraad with freshly pressed juice of a hand-selected blend of crabapples, cider apples, and quince to make this unusual beer.

Ingredients: Water, malted barley, triticale, crabapples, cider apples, quince, yeast, brettanomyces, lactic acid bacteria, hops.

750ml @ Sales Force. Appearance: hazy blonde with a white head. Aroma: lots of funk, fermented apples, crispy, European lager hops. Taste: along the same lines with, quite bubbly, grainy. Overall: quite weird, doesn't look to me that grains and European lager hops work fine in a mix with cider and bugs.

Poured from 750mL bottle. Hazy yellow with white head. Apple, bugs, brett, grain. Decent stuff.

750mL bottle, pours a fairly clear blonde with a medium white head. Aroma is nicely buggy, with lots of brett, a little lacto, crisp apple skins, and wheaty notes. Flavour is grainy and buggy, with soft pillowy wheat, bretty funky, light lacto, and apple skins. Carbonation is high but totally fitting, with lots of bugginess on the finish. Very nice. DeanF (and apparently now sergiy), what are you thinking?

Very nice meringue foam on a hazy deep yellow body. Smells of tart apple, grain funk, rustic barn hay. Taste is subdued apple, some soft tart grain. Ends a little wet, more carbonation would help. Not bad, seems a little timid.

Clearish yellow with a decent white head. Light cooked apple and some funk. Apple and funk and some cooked notes.
