Our 2021 vintage of Gathering in the Woods was blended from three methode traditionelle spontaneous barrels which aged for between fourteen and twenty-two months. A combined maceration on Minnesota grown red raspberries and tart cherries for three months triggered a juicy, jammy fruit flesh tannic dryness, coupled with fresh turned earthy loam and assertive acidity. This still-fruited lambic drinks like a tart dry fruit wine and is best paired with roasted meats or a charcuterie board.

Tap at MBCC2022, Copenhagen. Color is clear red with small white head. Aromas and flavors: Fruits, berries, red berries, sourness....pretty clear.

ABV: 6.5%. Murky matt medium red colour with a small, virtually no off-white head. Aroma is aceton, leather, tart, cherry, raspberry, red berries, tannins. Flavor is moderate to heavy sweet and light to moderate acidic with a long duration, cherry, jam, raspberry, tart, dry, funky, aceton, tannins. Body is medium, texture is watery, carbonation is soft to flat. [20220512]

Tap. Hazy purple color with white head. Aroma is raspberries and cherries, leather, earth. Taste is the same, very puckering, very sour. Tannins in the back. A bit too sour for me.

Tap @ Peders. Murky purple with a tiny off-white head. Aroma is sweet, malty, cherries, raspberries, wood and tart. Flavor is quite sweet and very acidic. Dry and rather acidic finish. 120522
