Everyone flourishes in their own time. Often, it takes patience and just the right conditions to hit your stride, and fully bloom.
Our Lambic style ale spent over two years in California Chardonnay barrels with five strains of Brettanomyces, four strains of Lactobacillus, and two strains of Pediococcus for a truly mixed fermentation.
At once delicate and complex, it is lightly sour with notes of oak, grape must and stone fruit. Enjoy with good friends!

330mL can, pours a clear golden with a small white head. Aroma brings out gentle chardonnay barrels, with light bugs and a hint of funk -- but not like a lambic. Flavour is nicely buggy, with white wine barrels, oak, plenty of bugs, a hint of champagne-like effervescence. Nothing close to a lambic whatsoever, but the wild yeast and chardonnay barrels are used quite well. Nothing extraordinarily, but pleasant and drinkable.

Okay clear gold body and essentially no foam. Nice tart funk on the nose, good wood, nothing else though. Taste is good funky grain, a hint of sour honey, ending smooth with okay carbonation. I wouldn't say Lambic, but it's still got a good funky sour vibe.
