Important tasting note : this beer is very stable and can be poured at room temperature without experiencing gushing. However, we shot for high level of carbonation as we believe it's the most adequate level for saison. We took 2 specific measure during the brewing and fermentation to guarantee that the bubbles are small, close to champagne size. However, this can only be achieved at our target serving temperature, 4°C. While this might seems low, saison are designed to be refreshing and thirst-quenching. The beer will anyway warm up and develop within a few minutes and you'll be able to enjoy the full aromatic pallet this beer has to offer.

Commercial description : Socoron (or Socouran) is the name used to designate 6 row winter barley in Wallonian dialect and translates as "Escourgeon" in French. It is one of our traditional saison. It’s brewed with malted and raw local 6 row winter barley. This grain is more challenging to work with and has a much lower yield which explains its rarity in modern beer. However, the challenges it creates are worth facing to get its deep rustic profile with earthy and bready notes.
A traditional farmhouse yeast strain combining high attenuation and a complex fermentation profile that displays white spices, lemon, grappes and grassy herbal notes.

0,75l bottle at home shared by Saeglopur, big thanks. Yellow hazy color, medium big white head. Smells peppery, tobacco, earthy, grainy, nice smell. Full body, soft carbonation. Tastes peppery, earthy, ripe fruits, yeasty, marzipan, light sweetness. Finishes lightly sweet with notes of ripe fruits, marzipan and peppery notes. Pretty good, rather on the heavy and not overly complex, but overall good

22/09/2021 Pretty lively, tons of carb, rusty cap and interesting wax on a saison, spicey farmy bit of citrus and a bit weird, dunno if the cap caused it issues or just me.
