This March we dove into our recipe notebooks looking for ideas to inspire the ultimate session-able stout recipe. Here is Ostara Stout our take on the concept of 'Dublin Stout'. Brewed to be complex but quaffable. We took some of our imperial stout tricks and adapted them to a lower ABV base recipe. The result has layered malts with some lovely soft chocolate notes finished with a nice hop zing to help clean the palate. Sláinte

330ml can from Dunell's in Jersey. Pours black with an off white head. Aromas & tastes of chocolate, coffee, toffee, hints of smoke & malt. Moderate to medium body. Sweet light bitter finish.

On nitro tap at Dew Drop, Galway. Dark brown, amber hue. Small lasting tan head. Aroma is toasted bread, roasted toast, coffee and butter. Flavour is charred wood, roasty, dark chocolate, charred wood, butter. Smooth, medium body, dry finish.

Nitro tap at The Beer Temple, Dublin. Roasted malts, coffee, ashy notes and dark chocolate on the surface with a sweeter, caramel-y base behind it. Easy to drink, smooth, full for what it is.

Can 33cl. @home poured into a pint glass. Pitch black, good frothy tan head, slowly diminishing, good lacing. Aroma dark roasted malt, caramel, cocoa powder, coffee groundings, ash notes. Taste medium sweet and bitter, malty, roast, dark chocolate, toffee, earthy notes, pinch of salt. Medium body, oily to creamy texture, spoft carbonation, malty bittersweet aftertaste, roasty notes, chocolate, solid stout, well-made, good.

Bière trouvée chez comptoir irlandais. Robe presque noire, avec juste une légère translucidité, surmontée d’une mousse fine et irrégulière. Nez puissant de malts torréfiés, réglisse et mélasse. En bouche, attaque amère et intense, plus beurrée que sucrée, avec des notes de réglisse salée et de sirop médicinal. Finale avec une belle amertume persistante. Corps moyen, carbonatation faible à modérée. Un stout réussi!

Keg draught at the Two-Tailed Lion, Leicester. Very close to black, just a bit of translucency with a small uneven khaki head. Heavy roasted malts, liquorice, molasses in the aroma. Bittersweet taste but more butter than sweet. Salted liquorice and catarrh syrup, with medicinal candies of the finish. Big bitterness in the aftertaste. Medium body and carbonation. What's not to love?

0.33 l can from 'Rebelbeercans', canned in May 2024. Black with a medium large, frothy, almost stable, beige head. Sweetish-malty, quite roasty aroma of cocoa, milk coffee, toasted hazelnut and a touch of vanilla. Gently sweet, malty, moderately roasty-bitter taste of cocoa, milk coffee, toasted hazelnut and light vanilla, followed by a short, moderately roasty-bitter finish. Almost medium-bodied, smooth and slightly effervescent mouthfeel, soft carbonation. Nice stout, easily drinkable and smooth.
