For this Rabarber, we macerated organic rhubarb for almost five months on two-year old lambik. We blended with more three-year old lambik right before bottling, rendering the weighted average age to more than two years and two months. Almost half of the cereals used in brewing these lambikken was sourced in our own cereal collective. Final rhubarb intensity is 250 grams per litre.

Tart, not too sour, fairly high acidity. Sweet fresh rhubarb, lemon, yeasty funk. Pretty smooth, fruity sweet, a dry finish. Very nice.

Like most of 3 Fonteinen’s newer lambics, this rhubarb one too was born from a few experiments in the vast Twists of Fate pool; this is the final version, sampled at Brasserie de la Sambre’s saison festival. Off-white, moussy, opening head on a hazy orange-tinged peach blonde beer with beige edges. Aroma of indeed lots of both stewed and raw rhubarb, dry old wood, unripe apricot, peach kernel, ripe pear, dried lemon peel, wet leather, cooked sour apples and a sulfuric note piercing through. Crisp onset with lots of rhubarb flavour, including oxalic acid, only increasing the crispness; sour apple and gooseberry esteriness blends in with the rhubarb, with even a very vague ripe stonefruit-like sweetness hidden deep within (associating with the cooked rather than raw rhubarb aspect). Fizzy effervescence, full and vinous body, lots of lactic, lemony and oxalic sourness over a soft bready malt core, complex esters and tannins gathering in the finish where this refreshingly tart rhubarb flavour lingers, alongside impressions of lemon and sour peaches. Ends dry and gently but clearly woody, but most of all ‘rhubarb-forwardly’ juicy. Excellent interpretation of this growing theme. Note to the admins: my rating actually concerns blend n° 94, but I put it here because I did not want to create a completely new entry for something which is as good as identical...

Blend n°24, 20|21. Very sour dry fruity beginning. The rhubarb is fruity there, moderate sour horse blanket. Mild creamy with sour horse blanket and only hints of rhubarb in the end. Very nice.

Pours hazed blonde, scent is very silent - noticably less intense than the 3 other versions. Very mild rhubarb. Taste is milder in tartness as well, recognizable rhubar - just at a seemingly lower intensity. Smooth balance, but less intense. Dry. Mild CO2. OK, just not very expressive at all.

Pours hazed blonde. Scent is full, rhubarb. Even more so than Rhubarb I . Taste is full, rhubarb, intense, but very one-sided, lambic gets overpowered by the Rhubarb. Not a bad beer, still, but my least preferred of the set .
