For this Rabarber, we macerated organic rhubarb for almost five months on two-year old lambik. We blended with more three-year old lambik right before bottling, rendering the weighted average age to more than two years and two months. Almost half of the cereals used in brewing these lambikken was sourced in our own cereal collective. Final rhubarb intensity is 250 grams per litre.

Pours hazed blonde, scent is very silent - noticably less intense than the 3 other versions. Very mild rhubarb. Taste is milder in tartness as well, recognizable rhubar - just at a seemingly lower intensity. Smooth balance, but less intense. Dry. Mild CO2. OK, just not very expressive at all.

Pours hazed blonde. Scent is full, rhubarb. Even more so than Rhubarb I . Taste is full, rhubarb, intense, but very one-sided, lambic gets overpowered by the Rhubarb. Not a bad beer, still, but my least preferred of the set .

Pours unclear blonde, scent is rough, funk, an undefineable aspect, not as clear rhubarb as the Rabarber I . Taste is full, tart, i'd say less rhubarb ( at least perceived) than the Rabarber I . More complexity though, balanced acidity. Not bad at all. Lovely balance, this more in favor of complexity than intensity by the fruits.

Pours hazed blonde, scent is very intense rhubarb Taste is full, fairly intensely tart. Intense rhubarb. Medium carbo. Lovely balance to me, bit of an oaky bite to it as well.
