The Meerts Tilquin series was made by fermenting fruit that had already been used once. Mirabelle was fermented for a period of 4 months in a blend of 80% 1 year old Meerts and 20% of a blend of different 2 year old lambics. Meerts (or March Beer) is a low strength lambic, which was originally produced with the weaker wort obtained from the rinsing of the grains. Unfiltered and unpasteurized, they are refermented in the bottle.

Flaska från Etre. Disig gyllengul vätska utan skum. Pigg, frisk och funkig med mycket karaktär från plommonen. Torr och det stramar lite i munnen, citron, äppelskrutt, krusbär och gröna plommon. Strå, stall och fuktigt trä, lite dammig. Mycket gott

Bottle at home in Hackney - picked up from Beer Merchants. Pours clear gold, effervescent, with a frothy, white head. Lightly sweet, nice lemony tartness, balanced acidity, soft wood, pale leather, come citrus, light salt, mellow grass. Light bodied with active, massaging carbonation. Balanced finish, lightly quenching, quite refreshing. I liked it very much.

Bottle. Color: Hazy yellow golden, white head. Aroma: Fruity, horseblanket and farmyard wild yeast funk. Taste: Over moderate tart, light sweet, fruity Mirabelle (yellow plum), hints of plum skin (taannins) and lemon, subtle wild yeast funk, subtle notes of wood. Dry-ish mouthfeel. Just under medium body, just below average carbonation. Ok Meerts.

Bottle @ Etre Gourmet. Pours hazy golden yellow with a white head. Intense funk. Juicy yet subdued orange and mirabelle beneath. Dry and crisp funky finish. Excellent.

"Plum lambic", simply said, but actually made with second-use mirabelles, which is botanically (only slightly) different from actual plums; the lambic is part two year old lambic, part 'meerts', which is lambic made from a secondary run. Egg-white, moussy, loudly fizzing, champagne-like, dissolving and eventually vanishing head, misty warm yellow golden robe with fierce champagne-like sparkling, turning cloudy and a bit deeper apricot-tinged with sediment. Aroma of indeed mirabelles in the sense of 'green small plums' (much like in the original Tilquin Oude Mirabelle à l'Ancienne), wild apples, plum kernels, lots of old furniture-like wood, dried lemon peel, unripe gooseberry, bitter green weeds, grape skin, sweaty Brettanomyces 'funk'. Astringent onset, lots of unripe or green stonefruit from the mirabelles and very low in fleshiness - though still describable as more or less 'juicy', side hints of crabapple, puckering lemon juice and even a touch of bitter grapefruit; very minerally, strong sparkling, cava-like, but maintaining a rather rounded mouthfeel. Bread-crusty 'soil' buried under heaps of green, astringent and only lightly juicy mirabelles, lactic sourness and tannic effects from both the fruit's kernels (and skins) and wood, while this stingy lemony acidity remains, keeping things crisp and refreshing. Damp hay- and sweat-like Brettanomyces notes pop up as well, but it is that 'green plum astringency' and fruitiness which lingers the longest. Quite similar to its original (if perhaps a tad more slender), this second-use version shines no less bright. Loved it.

Bouteille 37.5cl, BB 08/06/2031.
Dorée pâle avec un léger voile, col blanc-cassé épais retombant assez vite. Une fois sur la mi-bouteille je décèle qcq sédiments de levure dont certains ressemblant à des petites pépites.
Arôme est sur un rétro-nasal de fruité avec effluves de mirabelles marqué avec un rétro-nasal de funk, cave - lambics. Le fruité est là sans prendre le dessus.
Palais est marqué sur le funk - finement citrique, mirabelle reste plaisante avec une sécheresse latente. L'effervescence est assez haute avec une acidité qui perdure mais reste bien balancée par le fruité des mirabelels- même en deuxième usage.

Flaska från Etre. Guldfärgad med hög vit krona. Mycket doft och smak från plommon, syrliga kärnor, stenfrukt. Liksom övriga Meerts lätt och fräsch med något högre syra.

Bottle picked up at some kind of pop up shop opposite the Loon Factory. One of a box of nine. Aromas of baby sick. Sweaty leather. Rotted stone fruit. Taste is dry and lightly bitter. Pretty fresh and clean overall with foamy crisp carbonation. Moderate tart fruit finish. Decent.
