A ciderkin is the method of rehydrating and then re-pressing pomace to extract the remaining juices and sugars. This is a sustainable way of reusing pomace that would otherwise go to waste, but also a natural way of producing a dry, low-abv, refreshing cider. This is unfiltered and spontaneously fermented before being bottle conditioned for a light sparkle.

750ml bottle from Cork & Cask. Vintage 2021. Bottle 59/178. Hazy pale yellow colour, short-lived bubbly fizz on top and aroma of apple, fruity peach & citrus. Taste is sweetish, apple, juicy, stone fruit, citrusy, zesty with some tartness. Light bodied, spritzy carbonation, drying fruity tart finish. Nicely drinkable.
