Jim Koan has been farming his land organically for decades. The result is pristine soil that, along with a cool and unique microclimate, creates and ideal environment, or terroir, for small, highly flavorful apples. Jim grows over 50 varietals, often blending several types for cider like the pioneering Scrumpy. In bottling, we showcase one varietal to celebrate its character and the cider it produces with only the native yeast on its skin- nothing added and nothing taken away. Our process creates a voluptuous, bright, yet ‘hazy’ cider and highlights the natural acids and tannins for a clean, dry finish.

Cask at Elephant & Castle. Hazed looking and foamy head. Nose is sweet apple. Taste like non-alcoholic cider. Rich sweet apples. Eason honey crisp are eating apples for drinking though not my thing too sweet. Some wine and florals also on palate.

Can from Livonia Liquor. Pours a turbid rusty brown with a tiny bit of large bubbled head that dissipates instantly. Sweet and tart apple aromas on the nose. More of the same on the palate with some Belgian yeast character - clove, apple, cinnamon. Drying finish, but some nice Honeycrisp sweetness present throughout.

Pours a murky golden brown. Ripe apple and caramel-like aroma. The flavor is lightly sweet with tart apple, yeast, must, and caramel. Interesting.
