Ekologisk Kloster är vår tolkning av de öl som i Belgien kallas quadrupel eller mörk starkale och bland annat bryggs hos de fromma trappistmunkarna i sex kloster i Belgien och ett i Holland. Alla dessa himmelska öl är mycket säregna och smakrika. Några saker har dock alla gemensamt, de är alla mer eller mindre starka och överjästa. De är dessutom flaskkonditionerade det vill säga buteljerade med jäst och inte pastöriserade för att utvecklas vidare. Kloster har en stor och komplex smak och arom med en doft som både är fruktig, kryddig och maltig. Dessa egenskaper återkommer i smaken där alkoholen framhäver smakerna ytterligare utan att dominera. Eftersmaken är lång och behaglig med fruktiga toner. Spår av choklad och apelsin trängs med smaker av karamelliserat socker och mörka mogna plommon.

Klassifikation: Belgisk ale

Användning: Kloster är en öl att njuta. Dess stora värmande smak är en lisa för själen. Prova Kloster med exempelvis en rejält lagrad gorgonzola – de verkar gjorda för varandra.

Innehåll: Fyra sorters malt: Münchener-, pilsner-, ljus karamellmalt samt chokladmalt.

Fyra sorters humle: First gold, Hallertauer tradition, Opal och Sovereign.

Övriga smaksättare: Pomerans, apelsin och råsocker

Alkoholhalt: 9 %

Bottle at SBWF 2010 - 1999 edition - cons 2010-10-09 The girl (very nice a mucho friednly had a hard time to find one that were not infected - the 4th beer was OK) AR: scottish fudge, caramel, alcholic AP: hazy mahogny, wee head F: maderia, chocolate, caramel, alcholic, vinous, grapes, marzipan sweetness mmm - rating 4,1 ---- new average: 3,5 Bottle, 2007 edition, cons 2010-09-25, Göteborg AR: wee yeast, some mustard? AP: woody ruby red, wee bubly head that quickly disappears into nothing F: vinos, quite round body, a bit scotch toffee, a bit boring by a belgian one instead. One sense is that this have been stored for like 10 years but it was only 3!!! 2,9!

19th June 2008. 2006 bottle. A rich cloudy amber beer. Almost a creamy bock. Rich and sumptuos - a little chocolate just before the finish and a little banana in the finish.

Draught (Stockholm Beer Festival 2009) - Hazy amber in colour. Fruity and spicy aroma. Fruity taste with dried fruit, orange and raisins.

Draught 2006 edition @SBWF 2006. Hazy nut brown, not much head. Yeasty, fruity, grassy nose. Fruity, yeasty, some peach, faint hops and yeast there. Propably too young - quite different than 2005 batch. (5/3/7/3/12 3.0)

330ml bottle, vintage 2007, bb.2018, after salad lunch at Tegners Gömställe. Enjoyed together with vintage 1998. A few, thin floaters on the surface of a hazy, dark amber body. Aroma of malts and sweet, dark fruits. Dried fruits in flavour with complementing malty sweetness. Yeasty notes beneath and hints of bitter fruits to the ending. Dangerous easy to drink. More rough on the palate and almost as great as the 1998-edition (happy drinking in Stockholm, 03.09.2009).

Bottle, 0.33 l, 2006 vintage, at Pikkulintu, Helsinki, on 2008-11-21. Amber and hazy. Small white head. Strong raisiny and malty nose. Full bodied and lightly dry palate with little carbonation. Raisin, sweetness, bitterness, malts, caramell and chocolate in taste. Raisin and caramell in aftertaste. Marvellous beer.

2005 bottle thanks to bu11zeye. Pours with a small, off-white head that goes leaving a murky brown body. Aroma of brandy brown sugar, raisins, and lots of yeast. Taste is raisins, brandy and yeast. Light to no carbonation, syrupy.

First big vertical rating.Vertical testing on June 14, 2008. Tried the 2005, 2006 and 2007 side by side. (Also the 2002, which might seem confusing)Thanks to deft to arrange the purchase from Systembolaget of these three (and to rlgk for the 2002)2005 - (33 cl bottle, BB 150921 - that would be 2015)Shady copper to brown color, light brown head. Sweet malty, vinous, raissin and alcohol scent. Sweet, licorice, raissin, malty, caramel, earth tones taste, very nice. Smooth mouthfeel with rather low co2 level. Low to medium bitterness. Sweet and raissin with caramel aftertaste.8/3/8/4/15=3.82006 - (33 cl bottle, BB 13 okt 16)Slight shady copper to brown color, rather smallish tan head. Sweet, fruity, malty, raissinish, chocolate, alcohol scent, also grainy. Sweet, sugary, malty, raissin taste. Sweet caramel and subtle licorice with chocolate scent. Some alcohol and grainy also. Sweet, strong malty, biscut, caramel taste with some alcohol as well. Also warming alcohol present. Smooth mouthfeel with rather low co2-level, medium bitterness. Sweet, grainy and raissin aftertaste.I wish Slottskällans would have continued to manufacture this one. I also wish they had the guts, money, interest or whatever is lacking to brew more beers with a character making it worth while to drink.Please note that the 2002 version of this is supposed to be under this rating as well, however strange that might seem. Before we were done we found a 33 cl bottle of 2007 in the fridge too! Then after reading up on how we tried them last time started looking further in the the fridge and found a 33 cl bottle of 2006 as well!So I first rated 2012 against 2005, then rated the 2007 with beer left from the first two. In the end rated the 2006 with beer left from the first three.Vintage 2012, 33 cl bottle thanks to deft! Sampled on April 21, 2012. BB 2013.01.27A little bit of yeast in the bottleCloudy to murky orange to brown color, small orange to tan head. Spicy, lactic, alcohol, sweet, sugary, yeast, a touch of phenoles scent. Alcohol, phenolic, clove, smoke, yeast, lactic, sweet, sugary taste. Medium to moussy mouthfeel. Phenolic smoke and clove, mixed with alcohol, aftertaste. Warming alcohol. Fairly low bitterness from hops, but does get sort of a bite from phenoles and yeast, mixed with the slcohol, too young still probably.6/2/6/3/12=2.9Vintage 2005, 33 cl bottle thanks to deft! Sampled on April 21, 2012. BB 15.09.21Thick mudlike yeast sticks to the bottom of the bottle.Cloudy reddish orange color, smallish tan head. Vinous, raissins, malty, sweet, chocolate, grainy, orange scent. Sweet, raissin, madeira, chocolate, orange, grainy, dirt cellar, malty, sweet taste. Dirt cellar, dry, grainy aftertaste. Medium thin, low co2, mouthfeel. Low bitterness.Aged very well I’d say, very enjoyable. Lost some of the co2 and mouthfeel, but gained madeira and raissin aged notes. Nice lemonade feeling to it, yum!8/2/8/3/15=3.6Vintage 2007, 33 cl bottle thanks to deft! Sampled on April 21, 2012. BB 2018Sludgy mudlike yeast cake in the bottom of the bottleMurky red currant color, small yellow head. Dough, malty, sweet, alcohol scent. Malty, dirt cellar, alcohol, grainy, bitter, chocolate, sweet taste. Moussy mouthfeel, low bitterness. Aftertaste is sort of dry and grainy, bitter chocolate, some yeast. Also sweet, malty, fudge finish. Lable is horrible compared to 2005 and 2012. Chacarter of the beer for me is better than 2012, but not even close to 2005.7/2/7/3/14=3.3Vintage 2006, 33 cl bottle thanks to deft! Sampled on April 21, 2012. BB 30 Oct -16Yeast cake in the bottom of the bottleCloudy bllodorange red color, smallish yellow head. Sweet, dirt cellar, vinous, grainy, malty scent. Sweet, chocolate, grainy, alcohol, vinous, minty, alcohol, raissins taste. Dirt cellar and grainy aftertaste. Some warming alcohol. Low bitterness, but some bite from alcohol and yeast. Medium mouthfel. Warming up yields even more great taste, this one has not only survived aging, but for my taste it has greatly benefited from it!7/2/8/3/15=3.5

Bottle: "Old" bready-malty aroma, a bit like old wine, sugary as well; cloudy, amber coloured, quite small off-white foam; full bodied, robust sweet flavour; chocolate and/or cacao in the full-sweet-fruity finish, rounded by some shy hops in the aftertaste. Weak aroma, full flavour..........

(Draught at Man in the Moon, Stockholm. Vintage 2006) Dark reddish brown colour, cloudy, with brief, beige head. Malty, fruity nose with notes of dried fruit (prunes, figs), toffee and a hint of rust. Malty taste with dark fruit, spices, chocolate, toffee and a spicy bitterness in the finish. Balanced sweetness. Nice beer. Rerate: bottle, 2005 vintage, 24 Nov 2008. Reddish brown colour with brief, pale brown head. Slightly hazy with lots of sediment in the bottle. Malty nose with dark fruit, chocolate, toffee, cherries, prunes, dried figs and brown sugar. Malty, fruity taste with toffee, chocolate, dried fruit: raisins, figs and dates, brown sugar and a slightly spicy finish. Smooth and mellow mouthfeel with most of the carbonation gone. I’d say this has actually gained with maturation, it lost some of the sharp edge but is more rounded and smooth without losing character. Very nice one. 8/4/7/3/14
