Belgian pale & pilsner malts w/ Styrian Golding for bittering and Saaz for aroma. Ginger predominates the spicing. Fermented in primary with Ommegang’s house yeast, followed by secondary with Brettanomyces bruxellensis. Dry-hopped in secondary w/ a blend of hops; Tettnang being the stand-out. The flavor profile is very herbal with an earthy undertone (very fitting for a Belgian-style farmhouse ale). The dry finish and pronounced hop aromas hide the 8% abv very well. Dangerously drinkable for its strength and character.

Bottle. Creamy white good mostly lasting head. yellow colour. moderate malty and hoppy aroma. Brett. very present. Moderate bitter light sweet flavor. Average moderate bitter brett finish. Oily palate. Warming and slightly spicey (Cinnamon).

Sample at the HSC Sour Beer Tasting on 06/19/2010: This brew is a hazy yellow color with a thick and foamy ivory colored head that burns away slowly. Sticky large patches of lacing. Funky barnyard aroma with notes of yeast and hops. Medium body with flavors of citrus, yeast, clove and doughy malt. The finish is fruity with an earthy malt and yeast aftertaste. Decent Sour overall.

Aroma: Lots of sour/funky yeast on the nose, some citric notes, some fruit, and some grass
Appearance: A quite hazy orange cream-sickle color with a lasting fizzy white head atop it
Flavor: Taste has some farmhouse yeast with some citrus sweetness, tart notes, and grassy bitterness
Palate: The body is fairly light, carbonation has quite a bit of fizz (too much carbonation), refreshing feel to it
Overall Impression: This is a pretty interesting beer, I'm glad I was able to try it, and I think that year and a half plus of time from the bottling was good for this one. A good funk fronted Saison. The too much carbonation for me would be my biggest issue with this one.

Pale, hazy golden with a fizzy white head. Nice spicy aroma with citrus fruits, light sweet malts, and some yeast. Bubbly, thinnish body. Musty, bright citrus fruits, earthy, some spice, and yeast. A solid brew. easy to drink and really refreshing.

GABF. Hazy gold beer. Light and sweet. Lots of herby and spicy sweetness. Crisp palate. Some wheat beer characteristics. Good but would not want loads of this.

29th October 2014
4 or 5 year old bottle. Hazy gold beer, small pale cream colour head. Palate is airy and semi dry with a decent crispness from fine carbonation. Airy malts, light dried fruits, mild tartness. Modest brett. Finishes airy with a little more zing to the fruits. Quite drinkable.

Bottled at Copenhagen Beerfestival 09. Clear yellow color, short head. Cheesy aroma, bit spicy. Bit spicy and dry taste, slight sweet.

Bottle 75cl.Clear medium orange color with a average, frothy, good lacing, mostly lasting, off-white to white head. Aroma is moderate malty, caramel, alcoholc, moderate to heavy, brettamyse, barnyard notes. Not very complex just brett. Flavor is moderate to light heavy sweet, sour and bitter with a average to long duration. Body is medium, texture is oily, carbonation is soft. [20090710]

Bottle, 75cl corked, at Copenhagen Beerfestival. It pours an unclear, golden body under a small, white head. Bretty nose with citrus, pale malts and a spiced touch. Pale malts, spice notes, bretty funk, some lemon and alcohol makes a nice flavor, leading to a bitter finish with fruits and some brett. Dry, almost dusty mouthfeel, slightly astringent and warming. A lovely one, quenching and refreshing as hell. (090516)

Bottle courtesy of fun-haver (gunhaver). This batch 1 brew pours hazy apricot with almost no head. The aroma is fruity with pears, smooth ripe cherries, boysenberries and a bit of tart and funk. The taste is fruity with apples, berries, faint tartness and a sense of earthy funkiness. Nice.

Bottle at KØ09. Fruity aroma, slightly acidic. Cloudy orange colour. No head. The flavour starts off fruity, turning slightly acetic. Mild moldy aceticness.
