Belgian pale & pilsner malts w/ Styrian Golding for bittering and Saaz for aroma. Ginger predominates the spicing. Fermented in primary with Ommegang’s house yeast, followed by secondary with Brettanomyces bruxellensis. Dry-hopped in secondary w/ a blend of hops; Tettnang being the stand-out. The flavor profile is very herbal with an earthy undertone (very fitting for a Belgian-style farmhouse ale). The dry finish and pronounced hop aromas hide the 8% abv very well. Dangerously drinkable for its strength and character.

Bottle Thanks Sean Pours out a nice gold topped with a pillow white head. Aroma was nice lots of spice, brett, and some citrus hops. Tast was more of the spice, belg yeast and a nice citrus. Very Tasty

Hazy golden with a lasting white head. Aroma of citrus, coriander and other spices, flowers and a hint of alcohol. Dry, spicy and floral flavour with some pepper, something like fruity American hops, and a reasonably bitter finish.

75cl bottle @ VInensVerden, Odense. Pours Pours cloudy orange with a egg white foam. Nose is brett, hay & yeast. Some sweetness and alcohol. Medium and smooth palate. Taste is citrus, brett, yeast, hay, funk and fruity hops. Fresh, dry & funky!

ummmm, im not sure what to say. this is definetly the most interesting beer ive had in a long time. its like its not sure whether it wants to be a lambic, a farmhouse ale, a pale ale, or maybe a little of it wishes to be a champagne? delicious, herbal, and refreshing, a wonderful mix of flavors, tight bubbles make for a bit of a bite at first, but mellows out very qiuckly. a wonderfiul find

750 mL bottle of batch 2. Pours hazy gold with a white head. Aroma is quite tart, with green apples and a touch of cloves underlying it. Flavor has a light tartness, some hops, green apple, a bit of funk, very dry. Overall, decent but light.

Brown bottle, 750 ml, via Philippe Boutin, purchased on February 17 2009, savoured on February 20 2009; eye: golden with a nice citrus hue, hazy, nice effervescence, voluminous white head that falls and turns into a tiny ring, good lacing; nose: Brettanomyches yeast, horse, citrusy; mouth: Brettanomyches, yeast, horse, light fruity, light citrusy, finale in Brettanomyces yeast with a good presence of horse, a bit thin, average carbonation, medium body, rather sour, foamy texture; overall: special FRANÇAIS Bouteille brune, 750 ml, via Philippe Boutin achetée le 17 février 2009, savourée le 20 février 2009; œil : dorée avec une belle teinte citron, voilée, bonne effervescence, mousse blanche abondante qui tombe et se transforme en un petit anneau, bonne dentelle; nez : levure Brettanomyces, cheval, citrique; bouche : levure Brettanomyces, cheval, léger fruité, léger citrique, finale en levure Brettanomyces avec une bonne présence de cheval, un peu mince, carbonatation moyenne, corps moyen, plutôt aigre, texture mousseusee; en résumé : spécial

750ml corked bottle. Thick, murky orange-tan color with a frothy, thick head. Sour aroma of brettanomyces and funky farmhoue wheat. Lemony brett taste at first almost sandy on the palate. The dry bitterness of the hops really shines as you get into the beer. Complex and enjoyable, an interesting balance between sour and bitter. Excellent.

batch #2. Pours golden, white head. Aroma is funky / brett. Taste same as aroma with extra light fruit notes, grains and some spices. Finish was very enjoyable yet yeasty.

Bottle aged for about a year...cloudy apricot in color, with an off-white delicate head...light peach and yeast aroma with a clean refreshing body...zingy carbonation with a dry yeasty finish.. not too much going on flavor wise just light yeast and a little lemon with subtle clove..***food paring.....chicken burritos with Spanish rice as well as fresh avocado and tomatoes.... its not a bad beer, with i tried it when it was fresh as well
