Belgian pale & pilsner malts w/ Styrian Golding for bittering and Saaz for aroma. Ginger predominates the spicing. Fermented in primary with Ommegang’s house yeast, followed by secondary with Brettanomyces bruxellensis. Dry-hopped in secondary w/ a blend of hops; Tettnang being the stand-out. The flavor profile is very herbal with an earthy undertone (very fitting for a Belgian-style farmhouse ale). The dry finish and pronounced hop aromas hide the 8% abv very well. Dangerously drinkable for its strength and character.

Copper coloured body with a thick slightly off-white head - very nice! Aroma of strong malt, belgian yeast, fresh hops and a lot of spice and alcohol. Medium-bodied; Strong yeastie flavours with curacao and wheat most noticeable. Aftertaste shows some nice sugar coupled with a dry hoppy finish and plenty of alcohol. Overall, a nice hoppy and flavourful beer - definitely worth trying. I sampled this 75 cL bottle purchased on 12-July-2008 from Oliver’s Beverage in Albany, New York, sampled on 20-August-2008 at home in Washington, D.C.

Batch 2 (March 2008). Pours with a large, white head with a lightly hazy yellow body. Aroma of barnyard, pepper, lemon citrus and some brett. Taste is saison spiceyness with a nice lightly sour back bone. A well balanced beer that finishes a bit herbal. Dry mouthfeel with lively bubbles.

bottle - Pours hazy yellow-orange with a big, billowy head. The aroma is of that house yeast and some brett along with some light citrus and spice. The flavor had a nice balance of malt and mildly citrus accented spice. Up front the brett is subtle, but it kicks in more in the finish. This beer is medium bodied, lively on the palate, complex, and quite easy to drink. I really enjoyed it.

Pour is a bright orange with a large white head. Aroma is lots of funk and pine hops. It the kind of beer that fills the room with a wonderful aroma. Flavor is dry and citrus with a large hops profile and again some barnyard and yeast. A great example of the style. I had a fairly new bottle (April 08) so i can’t wait to see what happens after some age.

Sampled at Max’s Taphouse in Baltimore. Pours a translucent yellow with a cloudy, lacing white head. Aroma is earthy, funky, yeasty and spicy. Flavor is soft with yeast funk, hay, lemons, grass and perfume. Easy on the palate, a bit chalky with some lasting funk. Very mild, drinkable and appetizing.

Pours a hazy orangish yellow with big off white head. Funky brett aroma with some citrus and bread dough. Light wheat, grassy and earthy flavors with slighy sourness. Light to medium body with lively carbonation. Crisp and dry with hardly any aftertaste. Very refreshing, goes down real easy.

Bottle. Slightly hazy golden with a big stable white head. Aroma of floral hops, yeast, some citrus and a bit of funky brett. Fruity flavor with some malt sweetness, some slightly spicy hops, some yeasty notes and a bit of brett (not nearly enough to make an impression) and very light sourness. Finishes bitter and hoppy. Medium-bodied. Enjoyable.
