Belgian pale & pilsner malts w/ Styrian Golding for bittering and Saaz for aroma. Ginger predominates the spicing. Fermented in primary with Ommegang’s house yeast, followed by secondary with Brettanomyces bruxellensis. Dry-hopped in secondary w/ a blend of hops; Tettnang being the stand-out. The flavor profile is very herbal with an earthy undertone (very fitting for a Belgian-style farmhouse ale). The dry finish and pronounced hop aromas hide the 8% abv very well. Dangerously drinkable for its strength and character.

Bottled. Hazy yellow colour, small white head. Aroma is apples, grass, hay and some glueish sweetness. Also some zest and mild acidicness. Flavour is sour fruits along with sour wooden notes along with some grass and zest.

Bottled, thanks kmweaver! Pours muddy golden with airy head. Sweaty, lightky citric yeasty nose. Lightly fruit with medium body, some fresh hops mixes with a light touch of Brett acidity. Slimmer and more drinkable than I’d expect an 8% beer to be, yet complex. The funky character drowns a little bit in fruit and yeast though.

Bottle at the Laid Back Brussels Tasting (Feb 9, 2008)
Hazy, yellow body. Rocky, creamy head. Good lace. Aroma is strong on the hops with some malts. (Also some hints of bretts.) Heavily bitter flavour of hops. Quite plain, 1D flavour of hops, which is quite enjoyable. Not boring, but not great either.

Bottle courtesy of Hogtownharry: Poured a light golden yellow color ale with a large foamy head with good retention and some lacing. Aroma consists of light Brett with some very minor notes of horse blanket. Taste is also dominated by some light sour notes with some Brett notes and light horse blanket notes. Body is quite full with some good carbonation. What a big disappointment from the rave reviews I was reading 2 or 3 years ago. Brett character is really too subtle and hops presence was not as I was expecting it.

Dull pale, cloudy. The aroma is somewhat vague, dull yeastiness with accents that are likely brett but could be mistaken for phenols. The body is thin, and the alcohol is very apparent. There’s some fruitiness, lots of yeast (to the point of astringency)...and the finish is both muddled and dry. I’m going to cellar my other bottle cause this isn’t really all that shit hot right now....it goes nowhere and does nothing.

Bouteille 750ml, courtoisie de Hogtownharry. De couleur jaune et voilée. Nez de levures sauvages et fruitées (citron, traces de bananes et de poires), légèrement épicé (cannelle, muscade, traces de poivre) et houblonné (floral, notes herbeuses). Moyennement ronde en bouche avec un pétillement élevé et une texture moyennement crémeuse. Goût de levures sauvages fruitées léger-moyen sûres aux notes acides (agrumes et zest, surtout du citron, léger de pommes, traces de poires, de mangues et de bananes) accompagné d’un léger goût épicé (muscade, notes de cannelle) lors de l’entrée en bouche auquel se rajoute un goût moyennement amer de houblon floral et légèrement herbeux (présent jusqu’en finale) ainsi qu’un goût malté de biscuits au miel, de pain et de faibles notes de sucre bonbon puis en finale l’on retrouve un moyen goût de levures épicées (poivre) asséchantes accompagné d’un goût de houblon légèrement plus herbeux ainsi que des notes de fromage vieilli et d’alcool. Post-goût long et sec, moyennement amer de levures et de houblon floral et légèrement herbeux, légèrement fruité (pelures de pommes, zest d’agrumes) avec de faibles notes boisées.

Batch #1, June 2007. Hazy straw body, medium-thick off-white head. Herbal, peppery, spicy nose with floral notes (potpourri), light fruit, and just a hint of sour funk. Rather dry, spicy body, with bretty notes just starting to show in a light wispy tartness around the edges. Bitter finish. Alcohol somewhat obtrusive and hot. Sharp bite in the finish. We’ll see if it improves much over time.

750ml. bottle from Metcalf Discount Liquor in OP, KS. Pour is mostly clear (just faint haze) pale yellow with a bunch of carbonation and a big, loose white head. Aroma of nice earthiness and yeast. I did not get too much of the Brett initially. Despite being quite earthy, this also very fresh smelling, some hay in the nose. Taste is very nice, beautiful Saison body, with a the Brett creating some pleasant sharpness beautifully integrated around the edges. Mid to light body makes this very drinkable. This is a very nice beer, and goes down far too easy. Will need to save the other bottle to enjoy with food.
