Belgian pale & pilsner malts w/ Styrian Golding for bittering and Saaz for aroma. Ginger predominates the spicing. Fermented in primary with Ommegang’s house yeast, followed by secondary with Brettanomyces bruxellensis. Dry-hopped in secondary w/ a blend of hops; Tettnang being the stand-out. The flavor profile is very herbal with an earthy undertone (very fitting for a Belgian-style farmhouse ale). The dry finish and pronounced hop aromas hide the 8% abv very well. Dangerously drinkable for its strength and character.

very interestng beer.
Aroma is funk hops. The bret is there, but subtle, and the hops are funked, with a touch of saison pepperiness.
Flavour is a tad sour, and has a nice hop crispness. The finish lingers a little sour, and slightly hopps with some notes of citrus hanging on. Very interesting. I like it alot!

Corked bottle. Blonde. Plastic, oak, mango, grapefruit and pineapple in the aroma. Plastic and leather in the flavor, with citrusfruit and pineapple. Slightly perfumed. The brett really adds to the complexity of this beer.

This is from Batch #2, March 2008.

It pours a hazy straw gold with a 2 finger head of foam. Head retention is awesome and it sure doesn't suffer from lack of lacing!

The smell is very nice! I get lots of yeast, Brett, pepper, citrusy fruit, some caramel sweetness..very complex and very compelling.

The taste is true to the nose and that's a very good thing. The Brett is really big here but it doesn't exactly overpower the other flavours at all. Plenty of yeast flavour, pepper, tart fruit, a lovely bitterness, and the finish is quite dry and crisp demanding, yes demanding, that I take another sip and who am I to argue. ;^)

Medium bodied, the carbonation is fairly brisk but it works for the flavours that are in the Wild Ale. Drinkability would be off the charts if it were a bit less in the alcohol department though...whilst drinking, no *real* signs of it are in the taste at all and there's just a wee bit of warming after the swallow. No doubt, I won't have a problem finishing this 750 off....

Bottom line: This American Wild Ale is delicious, looks great in the glass, has a good mouthfeel, and is very drinkable. This is a good example of why I'm tempted to change my profile's favourite style from American IPA to American Wild Ale. The only trouble is, very good IPAs are relatively easy to find, one way or another. American Wild Ales, not so easy.

2007 Bottle. Pours a cloudy orange yellow with medium frothy white head. Aroma is funk, yeast, and ginger. Thin mouthfeel with strong ginger flavor and light spice. Decent.

750 ml bottle into tulip glass, bottled in March 2008. Pours lightly hazy golden amber color with a 3 finger foamy white head with good retention, that reduces to a small cap that lingers. Spotty foamy lacing clings to the glass. Aromas of lightly tart apple, pear, grape, lemon, pepper, clove, earth, hay, bread, herbal, and earthy yeast spiciness. Very nice aromas with good complexity and balance. Taste of pear, apple, lemon, pepper, clove, earth, funk, bread, herbal, hay, grass, leather, and yeast spiciness. Lingering notes of light fruits, citrus, pepper, clove, earth, bread, funk, hay, grass, and yeast spiciness on the finish for a good bit. Damn nice complexity and balance of flavors; with a nice malt and peppery flavor balance with good brett character; and zero cloying flavors after the finish. Medium-high carbonation and medium bodied; with a very crisp, prickly, and lightly slick mouthfeel that is nice. Alcohol is very well hidden with nearly zero warming noticed after the finish. Overall this is an excellent brett saison! Nice amount of flavor complexity and balance; and very smooth to sip on for an 8% brew. Really enjoyed this one.

Bottle. From November 2011 notes. Earthy malt aroma. Dark golden with a small white head, and sediment. Sour barnyard funk flavor with a dry finish. Light carbonated body.

750ml C&C bottle thanks to footbalm (batch #1, June 2007)
Appearance: Holy carbonation batman, the cork flew out as I was twisting off the cage. Luckily only a small amount of the good stuff came out. Pours slightly hazy yellow with a big frothy white head and lots of sticky lacing
Aroma: Brett, ripe fruit, spices and citrus
Taste: Light mouthfeel of citrus, peppery, barnyard, herbal with a tart dry finish
Very nice, refreshing and enjoyable.

Bottle @ home, picked up in somewhere in the Midwest. Cloudy, yellow-orange appearance with some sediment and a white head. Spicy, peppery, citrusy, Belgian yeasty, light barnyard aroma. Slightly vinous, peppery, Belgian yeasty, spicy, ginger, lightly sour, dry belgian ale flavor. Dry, spicy finish.

750 ml bottle. Cloudy orange color, massive white head, almost a gusher but not quite. Aroma of strong funk and sweaty feet. Taste is very bitter, sour, orange peel and malt. Unbalanced, far too bitter for a brett-laced sour.
