The goal for this iteration was to explore a new dry hopping process than is typical for us. One where we dry hop at a much cooler temperature, with the goal of extracting more bright and fruity hop oil compounds while minimizing green, polyphenol, astringent flavors you can pull when temperatures are higher. Fresh, punchy hop character full of tangerine pine, diesel driven sauvignon blanc and tropical fruit resin. We aimed for the line of bitter and dry where New England and west coast IPA converge.
