A wildly fermented, barrel aged cider, made from untreated and handpicked local apples from high standard trees, blended with some wine we made from homegrown Regent and Leon Millot grapes. The apples were picked at the idyllic collection orchard of Belgian pomologist and friend Dirk. Bottled April 2023.

pink color. Beautiful apple skins, cherries and rose in the nose. Bone dry lots of apple, cherries and big oak to the point of a touch of smoke. Nice stuff. Not a masterpiece, but nice

Thanks CT for sharing the bottle! Wineglass showing wine red with sparse white foam.

The nose is intense notes of barnyard door and Brett.

The palate is well carbonated and light bodied. Lightly tart with dry apples, a moderate acidity, and a light bacon note throughout.
