Hops: Sovereign and Cascade

A rich winter beer fermented over 7 days to give a pleasant dry finish. Brewed in October to give time for the beer to condition and allow the flavours of crystal and chocolate malts, Pilgrim, Sovereign and Cascade hops to mingle. Not your run of the mill sweet sticky winter warmer

Brown color. A bit cheesy/yeasty aroma. Very good malty (quite dry in the beginning; becomes more mellow later) and hoppy example. Strong final with a lot of caramel as well.

Deep chestnut brown; good dense, yellow-brown head, rather stable. Bit sourish nose - even outspoken Brett-like (!BBd: Jul ’05....); liquorice, lactic acid, quite vinous. Sour taste, but no more or inconspicous Brett. Hard woody-acids, liquorice, but not sweet, bitterness both from bitterhops as from roasted dark malts. Problem is, I find serious unbalance between nose and flavours. Medium bodied, but rather firm texture, bit of acidburn. Main problem: balance. Main quality: excellent nose and firm "bite" = mitigated feelings. Certainly not bad, and much better than the this/that/whotever nonsense series.
