It's no secret that we are massive fans of Belgian beer, especially those of the funkier variety. We have taken some inspiration from traditional lambic brewing (this is not however a spontaneously fermented ale) & many trips to Brussels & its surrounds with our next release.

We fermented low and slow for 3 months in stainless steel with brettanomyces trois before racking into French chardonnay oak casks with a fresh pitch of Brettanomyces lambicus were it conditioned for 18 Months, and then a further 2 months in bottle.

The resulting sour ale is bright & pale straw in colour with a dense pillowy head & med - high carbonation. It has a funky, barnyard aroma with a burst of lemon, oak and more funk on the tongue.

--Sample, thanks fonefan! -- Clear pale golden, lively head. Funky vinous nose. Tart with medium body and rounded mouthfeel. Peppery and funky, vinous and grassy. Low bitterness.

Sample (thanks fonefan!). Golden colour, small white head. Aroma is floral, fruity, nectary and some passionfruit with sugar too. Flavour is floral, some tart wooden tones with mild sea buckthorn, passionfruit and nectar. Nicely dry. Not sure if there is any sea buckthorn in this one, but flavour certainly makes me believe so.

ABV: 6.5%. Clear medium yellow colour with a average, frothy, good lacing, mostly lasting, white head. Aroma is moderate malty, wheat, pale malt, citrus - fruity, moderate yeasty, barnyard, leather, funk, grapes, wine, barrel. Flavor is moderate sweet and light light acidic with a average to long duration, wheat - pale malt, barnyard, grapes - wine, funky, barrel, citrus fruit, sweet malt, medium dry to dry. Body is medium, texture is oily to watery, carbonation is soft. [20230317]
