The Chimay Blue is a dark ale with a powerful aroma. Its complex flavor improves with passing time. The 75-centiliter version (since 1982) is called ''Grande Réserve'' because of its great storage potential., It was first brewed as a Christmas beer by the monks of Scourmont Abbey in 1956. But after its great success, it was decided to offer it permanently.

0.75l bottle, shared by Pavel D - was supposed to be for Slavia winning the 22/23 season... that was delayed, but... Here we are now. Clear brownish, off-white head. Vinuous caramelly grapey aroma, Belgian yeast in full force, well integrated alcohol, lightly dusty. Warming lean caramelly honeyish, dried fruit taste, mildly prickly carbonation on a smooth body, not much alcohol presence taste-wise, mild oxidation in form of dried figs kinda working. Nice to try it, excellent drinkability for the ABV!

For the 40th years of my wife. Opening this bottle with her and Mariela, relax, at home, in Epalinges. A right and tasty quad. In my point of view, this one is less powerful than the rochefort 10 but it is ok, really smooth at the palaye, toffee, yeast. 08.02.22

Review based on the BJCP2021 guidelines (style 26D, adapted: 2018 vintage). Bottle 75 cl - Batch 18-633 (BB: 12/2023) AROMA: medium alcohol aroma with a vinous, Madeira-like character. Medium-low malt background (caramel), slight roasted bread-crust and dried figs. APPEARANCE: very dark amber body and clear with slight orange highlights. medium-high tanned head, beady, with good retention. lace formation. TASTE: medium-low mellow malt flavor with slight caramel, slight toasted bread crust, with just a touch of sweetness. medium-low bitterness with a an almost dry and slight caramelly finish. MOUTHFEEL: medium-low to low body with medium-low carbonation. smooth low alcohol warming. OVERALL: a more easy-drinkable and smooth aged version of a well known Trappist beer.

Ok, I love trappist beers and this is one of the better ones. It’s great because it has wonderful flavor and it is not as expensive as the other Trappists. Very complex flavor. Great color, smell, everything about this beer is great!

Bottle with RJ, weird it took this long to rate this but anyway. Deep copper pour with an offwhite head. Nose is toasty malts, bread, intense abbey accents, fairly phenolic. Taste is slightly sweet upfront, malty, boozy, the same malt character shows as in the taste, then thr yeast character appears, peppery phenolics are very apparent, the finish is pleasantly bitter and dry, which rounds things off nicely. Classic for a reason.
