The Chimay Blue is a dark ale with a powerful aroma. Its complex flavor improves with passing time. The 75-centiliter version (since 1982) is called ''Grande Réserve'' because of its great storage potential., It was first brewed as a Christmas beer by the monks of Scourmont Abbey in 1956. But after its great success, it was decided to offer it permanently.

Sampled at Max's Belgian Fest 2023. Pours a clear amber with a ring of white head. Nose has raisins, figs, clove, all spice, cherry, malt. Flavor is cake, dried fruits, baking spices. Full bodied finish. Well balanced.

Dark brown, almost black pour with a ruby tint with a decent white head; aromas of bread/tea cake, caramel, dried fruit/red berries, hints of cocoa/chocolate and licorice. Tastes of sweet bread, caramel/toffee, red berries, dried fruits, cocoa/chocolate, spices (anise/liquorice, cinnamon, hint of pepper). Very good stuff. You don't feel ABV at all.
