A series of mixed culture sours, fermented in a selection of oak barrels and blended to balance acidity prior to introducing fruit. Composition 3 is a blend of golden sours, fermented in oak puncheons before aging in tequila barrels for 2 months, then refermented on blackcurrants with fresh lime zest, and bottle conditioned with champagne yeast.

Bottle pours out purple pink topped with a small head. Nose is berries funky spice and some berries. Taste is more of the nice sweet berries tart notes funky notes and plenty spice.

On tap at MBCC '19, Red session. Misty dark reddish body, covering pink-coloured head, fragile lacing. Berry skins and citrus on the nose. Sourish taste of ripe lemon, lime and dark berries. Berry-fruity end. Just ok, not a favourite. (Copenhagen 11.05.2019).
