Primordial Noir is a blend of imperial red ales aged in bourbon and wine barrels for up to two years with Northwest-grown Bing cherries and spices. A concentrated precursor to our Sang Noir project, Primordial Noir features a more robust bourbon and cherry presence with notes of roast malt, molasses and baking spices.

Bottle, 2017. Color: Very dark reddish brown, almost black. Very thin, almost no, beige head. Aroma: Tart, fruity, Bourbon hints. Taste: Medium tart, some vinegar, fruity notes of dark red cherries, red wine, subtle notes of dark and roasted malt, some light spicy notes towards and at the finish, very subtle Bourbon and vanilla hints. Wood tannins. Dry-ish and bit astringent mouthfeel. Over medium body, under average carbonation. Moderate sweet and light bitterness. Nice complexity. Missing some balance. Nice.

(Keg at Sori Taproom, 20190725) The beer poured black. No head. Aroma had vanilla, wood, tartness and burnt malts. Palate was medium bodied, dry and warming with medium carbonation. Flavours were vanilla, tartness, wood, burnt malts, sweetness and bitterness. Aftertaste was tart and bitter. A rather weird brew but still rather pleasant.
