Bofkont created this lambic not for a Billie Eilish concert or something, but for Billie’s Craft Beer Fest 2023, the Billie of which being the deceased bulldog of the owner of Billie’s Bierkafetaria which gave rise to this phenomenal beer festival. Snow white, open but edge-retaining, loose head on a hazy peach blonde robe. Aroma of ripe apricot, yellow plum, pickled peaches, rhubarb, wet wood, crabapple, raspberry vinegar, sorrel, ripe gooseberry, unsugared fruit yoghurt. Tart, crisp onset, unripe peach and plum notes mixed with bursting ripe gooseberry, Granny Smith apple and redcurrant, as well as a brief touch of white grape sweetishness amidst the overall sourness; minerally carbonation effects, rounded bready core under drying but fruity lactic tartness and ongoing stonefruit associations, leading to woody tannins and lemony yoghurtiness in the end. Excellent lambic blend – not sure which ones went in here exactly, but I bet at least one of them was a peach or maybe plum lambic…

Pours unclear blonde. Small white head. Scent is quite funky, fruity, reminding me of Fou Foune (So Apricot? or peaches? ) Taste is full, tart, apricot / peach like , lambic funk. medium body and carbo. Not bad at all !
