Brewed in celebration of Lent and Easter season, Carnevale is a light-bodied Saison, using Brettanomyces along with Amarillo and Simcoe hops to generate flavor and depth. Carnevale’s complexity grows with time. The citrus notes tend to wane and the wild yeast rears its wonderfully tasting head.

Bottle at a tasting in Beermalade. Rather thin body, high carbonation. Assertive funk, clean barnyard style, hay, horse blanket, really good, dry. Spicy, really easy drinking, tasty. Very good.

Bottle shared at Craftheads. Bit pissed by this stage. Golden colour, big fluffy white head. Aroma is great, soft, bit creamy, slightly soapy, but in a good way. Bit cheesy. Herbal. Light berry fruitiness. Good Brett funkiness. Strawberry shortbread. Taste is very nice. Sweet fruitiness, light citrus, really nice. Very fresh, bit of creaminess, nice herbal element. Little bit of bitterness at the end but very crisp and refreshing. Great stuff.

0.75 l bottle from Angry Moose, shared with lovely Anja. Murky golden, medium to a large frothy white head. Lots of Brett character, yeasty, funky, herbal and barnyard. Esters develop soon, mostly apricot and some orange or other citrus. Flavours are dominated by Brett, funky, acidic, fruity, phenolic, slightly plastic. Very tart! Medium body, rich but overwhelming, moderate to high carbonation, moderate finish.

Freezing Midtown bottle share. Light pale yellow pour, bit cloudy and pours with a pretty huge head. White and massive, coming down super slowly. Beautiful funky brett apple juice nose. Farmhouse barnyard at its best. Taste is funky as well, good fruity brett thing there, apple juice funk with brett bitterness. Some saison spices still shining through. Nom-nom.
