Despite Simplex being an ale, it has all the characteristics of an old-styled pils. It is a blond, unfiltered, unpasteurized, hoppy and bitter beer that remains low in alcohol. Resulting in a straw blonde, highly drinkable beer with plenty of flavor and character.

Taste: Refreshing, light and with a firm bitterness

Tap at La Fine Mousse. Cloudy golden orange with lace. Stark, hoppy nose, spicy, grapefruit, light mint, and snappy, crackery malt. Dry, light, hoppy flavor, crackers, grapefruit rind, herbs, mint, lemon. Super dry, peppery finish. Loses little to XX Bitter.

Draught @ Moeder Lambic Original, 68 rue de Savoie, Brussels, Belgium 1060. [ As De Ranke Simplex ].Clear medium yellow orange colour with a average, frothy, good lacing, mostly lasting, white head. Aroma is moderate malty, pale malt, sweet malt, minerals, moderate hoppy, grass, light yeasty. Flavor is moderate sweet and moderate to heavy bitter with a long duration, seet malt, pale malt, minerals, light floral - yeasty. Body is medium, texture is oily to watery, carbonation is soft. Unique, I'll give it that. Bone-dry, drier than dry, as floral-medicinal a Belgian ale I've ever tasted. Brings your usual Belgo-saison-ish traits to the table--fruit esters, underlying clove and vanilla notes, straw, grass, cracker, and lemon zest--but finishes it off with a mercilessly bitter back end, an unrelenting swipe of Euro-hop bitterness refusing to abate even as the Belgian niceties taper off the palate. Not entirely enjoyable, but not not enjoyable, either; as I said: unique. Pours a hazed straw gold with a lingering white head and voluminous lacing. Perky, medium-light texture helps dispel the hops, but not nearly enough. If the hops brought anything to the table other than their relentless bitterness, this might be a classic pint. As-is, it's not easy to love.

Bottle from a Carrefour in Ninove - thanks, Anke! Pours hazy golden with a huge, lasting, frothy, white head; little lacing. Surprisingly fresh & strong aroma of hay & grass, perfume, yeast, banana peel, clove, unripe pear, yellow apple, breadcrust, citrus. Taste is light fruity sweet, balancing unripe pear & apple with yeast, honey-like & bready maltiness, medium hoppy bitter core of grass, grain & spices. Dry, earthy hoppy finish, lingering yeast & grass. Medium body, slick texture, lively carbonation. Deceivingly complex interpretation of the 'simple' Belgian Ale style - if only all 'pilsjes' in the pub were like this... Original rating: 7/47/3/16=3.7

Bottle. Pours hazy darkishbstraw with stable white head. Clear aroma of malt, fruit and flowers, with estery notes and hints of hops. Bitter, hoppy flavour with sweetish notes of malt and yeast and floral touches. Bitter and estery afteraste. Low carbonation. Refreshing and easy to drink. Good, especially on a warm summer's evening. My rating #6000.

7 3 7 3 13Draft at Foeders, Amsterdam. Clear golden with a small white head. Aroma of yeast, dough, light fruits, a touch of veggies and light malt. Flavour is light moderate sweet and bitter. Light to medium bodied with soft carbonation.

Hazy blond color. Aroma of straw, puke, malt. Good mouthfeel, solid malt base, some biscuit and hay, strong bitterness in the final.
