Funky saison aged in puncheon wine barrels with tropical fruits

Oncilla Taxi is a funky saison aged in a Sangiovese puncheon with Brettanomyces claussenii and a Carmen Miranda hat of tropical fruits including Finger limes, Yuzu, Pink lemons, Mandarin oranges, Mandarinquats, Limequats, Calamondins and Fukushu Kumquats. (John’s sister is convinced we made some of these up.) The resulting beer has a pouncing tropical nose, subtle but tangy sharp acidity with fleeing notes of honeydew and green tea. The sheer volume of acidity from the fruits gives this a very different citric acidity than anything else we have done. Easy on the deforestation, folks, before this one has to be renamed “Sad, Homeless Cat.”

250ml bottle. Awesome citrus line up, really gives it some depth. One of the better fruit beers I have ever had, albeit a mixed culture Saison underneath. The fruits just boom, in a natural way. Aroma is fantastic. Body is sublime. Flavor is well rounded, deep. Awesome stuff.

Pour at Snallygaster 2025. Poured a clear deep ruby orange color with a small white head. Aroma was lime, mandarin, funky citrus. Flavor was citrus, woody notes, funk. Really strange, but tasty.

Bottle from Off Color from a friend. Thanks Adam! Pours a clear gold with a finger of white foam that dissipates. Funky, tropical brett aromas on the nose with oak and various tropical fruits. Tart on the palate with notes of lime, passionfruit, citrus and cherry. Kumquats really shine as it warms. Dry on the palate with a nice oak note with more of the same lingering fruit and citrus flavors. Really good.

Pour is a cloudy gold with a large white head. Aroma is lemon tartness with some chalky malt. Flavor is super tart with some lemon and bretty funk. Finish leaves a lot of frunk on the tongue. Nice bretty saison.
