For years, brewers at Goose Island have brainstormed ways to incorporate figs in Bourbon County Stout, but faced a daunting task due to their subtle flavor. After fresh thinking from members of the Goose Island E-commerce team, Melissa Alleguez and Ryan Hubona crafted a recipe inspired by Melissa’s childhood memories of stealing fig cookies out of her grandma’s cookie jar during her summers on Lake Michigan. And thus, the fig cookie and graham cracker-inspired Sir Isaac’s Stout was created. Highlighting the dried fried profiles extracted from the bourbon in the barrels, our brewers used Black Mission figs (10,000 pounds of them, to be specific) to create this variant resulting in characteristics of dried fruit, honey, molasses, and citrus, all reminiscent of the classic fig cookie sold on shelves today.

Poured from 500mL bottle (2022 vintage; courtesy of Beerplace; birthday beer). Near black with small beige head. Figgy dark fruit and molasses with bourbon and a hint of light cookie dough. Like a bourbon doused Fig Newton. Enjoyable.

Just realized I never entered my notes from last year's BCS media event: This has the sweetest nose of the beers tonight. Like a Christmas pudding or maybe a fruitcake. This leaves less alcohol in the nose. There’s fruit leather and a note of cinnamon. I could not quite catch any hint of Graham flour to complete the “cookie” taste. Luckily, the figs only add their flavor added to the beer, and we don’t have to think about how, like sausage, it’s best to skip the subject of how figs are pollinated.

500mL bottle, pours jet black with it's a small tan head. Aroma is wonderfully complex, with lots of figs, bourbon barrels, brown sugars, and dark dried fruit. Flavour is wonderfully complex, with deep dark fruits — loads of figs especially — with brown sugar, bourbon barrels and a touch of molasses. Pretty wonderful adjuncts in here. Luxurious, nicely boozy and still bourbon-heavy. Lovely.

Poured from a 2022 vintage, 500 ml bottle with an August 28, 2024 best by date. Aroma is fairly fruity with lots of fig, raisin, prune and date notes. Moderately strong chocolate, toffee, dark caramel and graham cracker notes. Light roast notes. Light alcohol and bourbon notes with faint oak. Pours jet black with a medium sized, thick, dark mocha head that recedes steadily to a small film that lingers on the edges. Flavor is fairly sweet with lots of graham cracker, dark caramel and toffee notes. Lighter chocolate and roast notes. Moderate bitterness and medium light alcohol notes. Moderate notes of figs with lighter notes of raisin, prune and dates. Light bourbon and faint oak notes. Mouthfeel is full bodied with medium carbonation. Low astringency and medium low alcohol warmth. Overall, a pretty solid BA imperial stout. The aroma is fairly fruity, but the flavor has a lot more caramel, graham crackers and overall malt character leading the way. Bourbon and alcohol notes are well integrated and not overpowering.
