PINTA Kwas Theta 24,7°- it took nearly 7 months to brew this one! Why? First we brewed solid, chocolate and roasted RIS and fermented it with beer yeast and whiskey yeast. Additionally, a part of wort has been acidify with a fresh blend of lactic acid and then added to a beer. In next step we added 1000 liters of freshly squashed juice from Polish sour cherries to the beer, just to make sure that it will be more sour and it will have some fruity notes. In third step we "finished" RIS with wild yeast Brettanomyces. Kwas Theta is extremely sour but also roasted in aroma, chocolate-like and funky (thanks to Brettanomyces). Aftertaste is a little bit sweet, but also bitter and cherry-like. PINTA Kwas Theta 24,7° - sour, wild and fruity Russian Imperial Stout.

Ingredients: water, Weyermann® barley malts: pale ale, roasted barley; Thomas Fawcett: Crystal, Red Cyrstal, Pale Chocolate, Chocolate; hops: Admiral, East Kent Golding, Fuggles; hop extract CTZ (USA); fresh cherry juice from Polish sour cherries; sugar; yeasts: Safale™ US-05, Safspirit American Whiskey; lactic acid blend: L. plantarum, L. delbrueckii, L. brevis; wild yeast Brettanomyces blend: The Yeast Bay "Amalgamation".

Bottle looks simple but good. Beer in the glass deep black, almost no head. Intense malty aroma, light fruity touch. Starts quite sourish, notes of cherries, lemon. Woody background. Not too malty. Finish with woody notes, sour cherries, some bitterness. Interesting combination.

Bottle at home. Dark brown with beige, lasting head. Sour cherry, some chocolate, a bit of oak, iron. Taste is slightly tart. Like an infected BCBS but tastes pretty good.

Black with a brown head - Wood aroma with sour notes - Malt body with sour berries and wood - The sour berry, wood flavour goes into the finish - This was good

wazig donker bruin met volle bruine kraag. aroma van hout, kers, zuur, ruikt naar een sour red/brown. Smaken matig bitter, zacht, flinke chocolade, zure kersen, bes, geroosterd en gebrand, wat cacao, matige body, bijzonder.

Tap @ FairBar, 10.2%. Very dark brown with medium beige head. Aroma is roasted malt, sour fruit, chocolate, caramel and cherries. Flavour is roasted malts, chocolate, cherries, sour fruit, sweet, citric, little sour and caframel

Barwa ciemna, piana gęsta koloru beżowego drobnopęcherzykowa. Po otwarciu z butelki wydobywają się aromaty dzikich drożdży. Natomiast po przelaniu królują aromaty gorzkiej czekolady. W smaku z kolei rządzą kwaśne wiśnie oraz kawowa gorycz. Bardzo fajny eksperyment!

Bottle from the dregs run. Murky brown with a thin beige head. Aromas of cherry, whisky, almond and balsamic vinegar. Taste is more of the same, very fruity finish.

Bottle at Craigs. Pours deep brown, nose is liquorice, funky, roasted, soy, taste is liquorice, tart, juicy cherry, chocolatey.
